Vitamin D is probably one of the least
understood essential elements and an area of great concern. The FDA,
USDA, National Institute of Health, and many others are all
concerned about the general deficiency of vitamin D in the American
public. This deficiency stems from a couple of areas. Normally our
bodies will generate plenty of vitamin D as a result of exposure to
the sun. However, with increased concern over health risks from UV
radiation, people are getting less exposure and therefore less
vitamin D. To correct this, the FDA has authorized the milk and
orange juice industries to make health claims for their products
that are supplemented with as much as 40% of the
recommended daily value of vitamin D and Calcium. They are only
allowed to make these claims if they have both D and Calcium in a
minimum level. Specifically, the combination of D and Calcium will
work together to prevent osteoporosis.
Vitamin D is essential to the absorption of
calcium into the bones. Without vitamin D you can eat all the
calcium you want and your body simply won’t absorb it. But Vitamin D
