Vitamin D Fact Sheet

Vitamin D is probably one of the least understood essential elements and an area of great concern. The FDA, USDA, National Institute of Health, and many others are all concerned about the general deficiency of vitamin D in the American public. This deficiency stems from a couple of areas. Normally our bodies will generate plenty of vitamin D as a result of exposure to the sun. However, with increased concern over health risks from UV radiation, people are getting less exposure and therefore less vitamin D. To correct this, the FDA has authorized the milk and orange juice industries to make health claims for their products that are supplemented with as much as 40% of the recommended daily value of vitamin D and Calcium. They are only allowed to make these claims if they have both D and Calcium in a minimum level. Specifically, the combination of D and Calcium will work together to prevent osteoporosis.

Vitamin D is essential to the absorption of calcium into the bones. Without vitamin D you can eat all the calcium you want and your body simply won’t absorb it. But Vitamin D does a lot more than that.

It is also:

  • Essential for the absorption of magnesium, and the building of muscle tissue.

  • A known antioxidant

  •  Suspected to be effective in fighting a variety of cancers including colon, breast, and prostrate.

  •  It is suspected to be effective in fighting numerous diseases including multiple sclerosis, Type 1 diabetes, and rheumatoid arthritis.

But Why mushrooms? The best natural sources of Vitamin D are cod liver oil, salmon, and various other fish including tuna, liver, egg yolks, and Swiss cheese. It is not found in any other vegetables or other types of produce. But mushrooms have a natural level of vitamin D, and when exposed to sunlight they synthesize vitamin D just like humans do. This is a really nice solution, as we can eat mushrooms and get all of our necessary vitamin D but without risking excessive exposure to harmful UV rays.
Additionally, our bodies can store excess vitamin D in fat tissue so that it can be held until it is needed by the body. Vitamin D is so important, the FDA is currently considering raising the Recommended Daily Value by 150 percent from 400 IU’s up to 1,000.

Monterey’s Sun Bella Mushrooms provide a minimum of 100 percent of your daily recommended value in every three ounce serving.  And no matter how you serve them, the vitamin D will come through. Cooking further preserves the vitamin D content of the mushroom until you eat them. No matter how you serve them, either cooked or raw, all of vitamin D comes through for you.

Monterey Mushrooms has worked closely with the USDA in developing our unique process for getting our mushrooms all of the sunshine they need to help you get your vitamin D. Now you can get the already well established benefits of eating mushrooms (low in calories, no fats, no cholesterol) along with all of your daily requirement for vitamin D in a naturally healthy and safe manner.
